Good Things

 Candy Cane Joe-Joe Truffles


Start with a box of these.  If you don't live near a Trader Joe's, you really should.  I think I'll tell Michael that that's one of my non-negotiables when we're picking a place to live in the next couple of months.



Set aside about 5 cookies to use later.  For the rest of the box, stick 'em in a bag and crush them. 



They're actually pretty tough to crumble since they have a creamy filling.  William didn't do that great of a job, so I had to take over.  Maybe it was because he was eating the cookies instead of focusing on the task at hand.


Once they're crushed, put the crumbles in a bowl and mix it up with 8 ounces of cream cheese.  It's pretty thick stuff... I ruined my new hand mixer, so be careful!


Once it's mixed, roll it into little balls.  Then I stick those in the freezer so they're easier to work with. 

Melt chocolate chips.  I just hold my pan above another pot with an inch of boiling water in it.  I also add just a touch of shortening to the chocolate chips - it keeps the chocolate smooth and easy to dip the balls into.


Dip the frozen truffle balls into the melted chocolate, then cover with crushed cookie sprinkles from those few reserved cookies you set aside in the beginning.


 Aren't those pretty?
